Spaghetti Rolls

Today I propose you a very tasty Sicilian recipe, Spaghetti rolls with Eggplants.

The Sicilian cuisine is reach of a lot of vegetables, simple ingredients, that, mixed all together with a lot of fantasy, become the amazing dishes that sometimes I propose to you. This is a recipe that remember me the summer. You can prepare with pasta leftover as well.

Ingredients

  • Spaghetti

  • Eggplants

  • Tomato Sauce

  • Grated Parmesan Cheese

  • Extra Virgin Olive Oil

  • Salt

  • Garlic

  • Basil

Steps

  1. Prepare you Sauce, placing in a pan Extra virgin Olive Oil, and Garlic. Cook for 1 minute and add you Tomato sauce, the Salt and the Basil

  2. In a pan cook your Spaghetti in boiling and salted water

  3. Peel and Slice an Eggplants and Fry using Extra Virgin Olive Oil

  4. Mix you Pasta with the Sauce and the Grated Parmesan Cheese

  5. Prepare your rolls, using the fried Eggplant slices, stuffing with the Spaghetti

  6. In a baking pan place some tomato sauce, add on top the rolls and cover it with Tomato sauce and Grated Parmesan Cheese

  7. Bake it 380F for 30 minutes.
