Yesterday my husband asked me the best for him: Carbonara!
Carbonara is one of the most traditional recipe in Italy and it arrive from central Italy Lazio/Rome.
it is a very simple dish and the name derives from Carbonaro that in italian means charcoal burner.
The best is to prepare Carbonara with spaghetti, but you can use whatever you want.

eggs 1egg and 1yolk (for 2 people)
guanciale or bacon
percorino romano and parmesan cheese
extra virgin olive oil
place water in a pan and start cooking to arrive boiling
place in a little bowl 1 egg and 1 yolk (for 2 people) and start mixing
add the pecorino romano and parmesan grated, and black peppers continuing mixing
in a frying pan, place the guanciale or bacon cut in small pieces. no oil, just it, because the guanciale or bacon will release fat that becomes your oil
start cooking slowly until it become transparent and release fat
meantime cook spaghetti, I suggest 8 minutes but I am italian!!!
when the spaghetti are cooked, drain it with a colander and place in the frying pan with the bacon and start mixing and cooking very slowly for 2 mintues
turn off the stove and add the eggs mixture mixing.
