continuing with light meals I prepared this recipe.
Good good good...and I don't like chicken a lot!!!
But you have to try it!

Extra Virgin Olive Oil
chop the carrots, celery and onion
place in a frying pan with Extra Virgin Olive Oil and cook very slowly for 15 minutes
meantime chop the chicken and coat with almond flour
place it in the frying pan with the vegetables and add the rosemary. Add also the white wine and cook for 10 minutes
prepare the dressing slicing the rep peppers and cooking for 15 minutes with salt and a pinch of water
blend the peppers
place in a tray the dressing and on top the chicken and the vegetables.
serve with boiled Jasmine rice
