this week it is unusually cold in Florida!
So today I prepared Pasta and Potatoes that is warm and comfortable.
It is one of my comfort foods.
Pasta and Potatoes is a very simple dish. It was born in Naples, South Italy, during 17th century because the potatoes were very cheap to buy and because it is very nutritious.
I used to prepare it when it is cold and I love it!

Extra Virgin Olive Oil
Grated Parmesan Cheese
Peel and cut the potatoes in little pieces and leave for 10 minutes in a bowl with water
Place in a pan the Evo and garlic chopped and cook for 1 minute
Add the Potatoes in the pan, add the Parsley and salt and cover with water and cook for 15 minutes or so
When the potatoes are cooked, add the pasta in the same bowl, add water if you need and cook for 10 minutes
Serve with Grated Parmesan Cheese on top
