Rice Mushrooms and Speck
I am again in my home in Orlando.
I miss so much my Sicily!!!
today I will show you a winter recipe.
It is rice and mushrooms, not a risotto because risotto is so soft, but a fried rice because today I want something crispy!
Here are the ingredients and the steps. You can find the video recipe in my Instagram page (my profile - highlights) or in my YouTube channel.
Speck (or bacon if you don't find it)
Grated Parmesan Cheese
Extra Virgin Olive Oil
wash and cut in little pieces the mushrooms
place them in a frying pan (plain) and cook for 5 minutes or so, so they will release the water
add the Extra Virgin Olive Oil, Garlic, Parsley and White Wine and cook for another 5 minutes
In another frying pan, place the Speck (or bacon if you don't find it) and fry plain for few minutes until it become crispy
chop the Speck in little pieces
meantime you boil the Rice.
when the Rice is cooked, place it in the frying pan with the mushrooms and add part of the Speck. Fry for few minutes.
Add grated Parmesan cheese and serve with the remaining Speck on top.
