this recipe remembers me Christmas in my family because every Christmas lunch my mother used to prepare it.
For sure there are a lot of recipes for Roasted Beef and here I will show you my family recipe.
I use a lot of herbs because I like them so much!

Extra Virgin Olive Oil
Brandy or Cognac or red Wine
Beef eye of round roast
peel and blend onion, carrots and celery
Place in a large pan with Extra Virgin Olive Oil and cook very slowly for 15/20 minutes
Meantime prepare you beef doing some holes in the beef and stuffing with chopped garlic and parsley
spread on top of the beef, salt
place the beef in the pan with the vegetables and roast it just for few minutes, turning it sometimes
add the Brandy Or Cognac or Red Wine
add Rosemary and sage and 2 glasses of water
cover with a lid and cook very slowly for 1 hour, adding if you need other water and turning it if you need.
when the beef is cooked, wait for cold down and slice it
Serve sliced and covered with the dressing vegetables you cooked with the beef
