Tagliatelle from scratch

Updated: May 15

I prepared a an Italian traditional recipe: home made pasta from scratch.

Pasta origins arrives from 40,000 years old and just 2,000 years old we had the real pasta as we know today.

It arrives from Greek and everything started in Sicily (my country!).

Now we know (and we prepare) a lot of shapes of Pasta and today I am going to show you Tagliatelle.

anyway you can use the same dough to do lasagne, spaghetti and so on.

Follow me in my kitchen and we will have a lot of fun!

  • 200gr / 1+2/3 cups Flour

  • 2 eggs (if you add another 100gr/3/4 cups flour, you have to add 1 egg)

Here are the ingredients and the steps. You can find the video recipe in my Instagram page (my profile - highlights) or in my YouTube channel.

  1. place the Flour and in the middle the eggs in a wood tray

  2. start mixing until you have a smooth dough (usually I spend 10 minutes)

  3. leave it for 20 minutes covered with the plastic paper

  4. use a pasta maker or a rolling pin to roll out the dough and obtain a thin dough. Usually I arrive until the number 3 or 4 of the pasta maker

  5. chose the shape you prefer and cook it for few minutes in boiling and salted water.

Buon appetito!
