Almond Brittle

Buongiorno,

Christmas is coming very soon and I cannot miss Almond Brittle during this magic week.

It arrives from the ancient Spain and it is very very simple to prepare, fast and few ingredient.

In Italy we use to eat Almond Brittle (or in italian Torrone) during the Christmas eve and Christmas day, often after dinner or Lunch.

And I add that I am from the most important Almond production area in Italy and often we use the almonds when we cook.

So, go and cook it!

Ingredients

  • 500gr / 3.5 cups almonds

  • 500gr / 2.5 cups sugar

  • 2 tbsp honey

  • 1 orange zest

Steps

  • Place the almonds in a baking pan, if you want you can use parchment paper and bake for 10 minutes at 360F

  • slice the orange zest very very thin

  • in a frying pan, place the sugar and the honey and cook slowly mixing until it become liquid

  • add the almonds and the orange zest mixing very fast just few second and place everything in the parchment paper previously oiled

  • roll our very fast and very fast cut it in squared pieces
