Arancini or Rice balls!
It is one of the most popular Sicilian recipe.
And you know I arrive from Sicily, my lovely island!
Arancini arrive from 10th century in Sicily, to period of Arabian domination and we suppose that they brought the arancini in Sicily.
It is a rice ball stuffed with cheese or ragu' or beef (you can add what you prefer), and coated with bread crumbs, and deep fried.

Tomato Sauce or Ragu'
Extra Virgin Olive Oil
place in a pan, rice, butter, broth (covering the rice) and start cooking until the rice absorb all the broth
use a colander to dry the rice and place it in a bowl
add Tomato sauce or Ragu' and mix
place the bowl in the refrigerator for 2 hours
place in a bowl water and flour and in another bowl the breadcrumbs
prepare a little ball with the rice with inside the mozzarella cheese and coat it with the flour and water mixture and after with the breadcrumbs
fry them in deep way, in a pan with Extra Virgin Olive Oil
