it is almost the end of the summer and summer for me means eggplants!
I loved it and today I will show you a new recipe, easy to prepare and also fresh for the summer!

Panko Bread crumbs
Parmesan cheese grated
peel and slice the Eggplant and place in a bowl. Cover with water and add salt and leave there for 30 minutes or so
place the slices Eggplant in a baking pan previously oiled or using the parchment paper
spread Evo on top
add Panko bread crumbs, Salt, Herbs and Parmesan grated
bake it at 380 degrees F for 20 minutes.
