Caponata is one of the most popular recipe in Sicily.
It is a mix of vegetables fried, everything is fried, double!!!
there are different versions of Caponata from west to east sicilian coast.
It is a Vegan recipe.

extra virgin olive oil
white wine vinegar
peel an cut in little pieces the eggplants and fry them in a frying pan with extra virgin olive oil until it become golden
peel an cut in little pieces the potatoes and fry them in a frying pan with extra virgin olive oil until it become golden
cut in little pieces the red peppers, taking off the seeds and fry them in a frying pan with extra virgin olive oil until it become golden
in a frying pan, place extra virgin olive oil, carrots (peeled and cut in little pieces), celery (cut in little pieces) and garlic and fry very slowly for 15 minutes
add the capers, the black olives and the vegetables already fried.
add the salt, the sugar and the vinegar and mix all together cooking for 10 minutes.
