Caponata

Buongiorno!


Caponata is one of the most popular recipe in Sicily.

It is a mix of vegetables fried, everything is fried, double!!!

there are different versions of Caponata from west to east sicilian coast.

It is a Vegan recipe.

Here my family Caponata!




Here are the ingredients and the steps. You can find the video recipe in my Instagram page (my profile - highlights) or in my YouTube channel.


Ingredients

  • eggplants

  • potatoes

  • red peppers

  • carrots

  • celery

  • garlic

  • capers

  • black olives

  • salt

  • sugar

  • extra virgin olive oil

  • white wine vinegar

Steps

  • peel an cut in little pieces the eggplants and fry them in a frying pan with extra virgin olive oil until it become golden

  • peel an cut in little pieces the potatoes and fry them in a frying pan with extra virgin olive oil until it become golden

  • cut in little pieces the red peppers, taking off the seeds and fry them in a frying pan with extra virgin olive oil until it become golden

  • in a frying pan, place extra virgin olive oil, carrots (peeled and cut in little pieces), celery (cut in little pieces) and garlic and fry very slowly for 15 minutes

  • add the capers, the black olives and the vegetables already fried.

  • add the salt, the sugar and the vinegar and mix all together cooking for 10 minutes.
