you know in Sicily one of the most popular food is Eggplant!
so I have a lot of recipes with eggplants.
Today I prepared a simple recipe that you can use as appetizer or main entree.

peel and slice the eggplant
leave in a bowl with water and salt for 30 minutes
in a frying pan place the Evo and when it is hot, place and fry the eggplant slices
prepare the roll, placing the ham and cheese on top of the eggplant slices
roll the eggplant slices and add the bread crumbs.
place on top the sage and bake for 15 minutes at 380 degrees F.
