another healthy food for you!
Easy and fresh it is one of my summer recipes but I prepare also during this Florida warm winter.

Extra Virgin Olive oil
slice the eggplant and leave 15 minutes in a bowl with water and salt
grill the sliced eggplant
slice the tomatoes and mozzarella
prepare a circle in a tray with mozzarella, tomatoes, basil leaves and sliced eggplant
spread on top Extra Virgin olive Oil and salt
So far So Cook
