Eggplants Parmigiana

Eggplants Parmigiana is a cult in Sicily, mainly during the summer and it is the main dish for Ferragosto holiday.

Here my family recipe from my Mami Anna!

Tomatoes sauce

Basil leaves

Parmesan cheese grated

Extra virgin Olive oil

Coarse salt


  • peel and slice the eggplants and place in a bowl with water and salt coarse for 30 minutes

  • in a frying pan, place Extra virgin olive oil and when the oil is very hot, fry the eggplants slices

  • in a dish place 2 spoons of extra virgin olive oil and some spoons of tomatoes sauce, add the fried eggplants slices and on top parmesan cheese grated and basil leaves. and continue with 3 layers.
