Lasagne and Rapini


Today I prepared a special Lasagna with Rapini and Salsiccia.

it is very tasty and it is white, no tomato sauce.

It is typical in south Italy.

The classic Lasagna with Ragu is from Bologna, north Italy.

But you know that there is a big difference between north and south Italy, in the kitchen as well.

You have to try this special Lasagna, it is delicious!

Here are the ingredients and the steps. You can find the video recipe in my Instagram page (my profile - highlights) or in my YouTube channel.


  • Rapini

  • Sausage

  • Lasagna

  • Extra Virgin Olive Oil

  • Salt

  • Garlic

  • Provolone Cheese

  • Grated Parmesan Cheese


  • Milk

  • Flour

  • Butter

  • Grated Parmesan Cheese

  • Nutmeg

  • Salt


  1. Prepare the Rapini - Take just the leaves of Rapini and place them in a pan, cooking for 5 minutes. Add Extra Virgin Olive Oil, Garlic and Salt and cook for 5 minutes.

  2. Prepare Sausage - Take just the pulp of the Sausage and place it in a frying pan with Extra Virgin Olive Oil and cook for few minutes mushing it.

  3. Prepare Besciamella - Place in a pan, Butter and start cooking very slow to melt it. Add slowly the flour, mixing and the Milk continuing mixing. When it become dense, add the Grated Nutmeg, a pinch of Salt and the Grated Parmesan Cheese.

  4. Prepare the Lasagne - in a baking plan, place the first layer of Besciamella. Continue adding on top, a layer of Rapini, a layer of Sausage, spread on top Grated Parmesan Cheese, a layer of Besciamella and a layer of Provolone Cheese. and repeat in the same way with other layers. at the end, spread on top, Besciamella, Grated Parmesan Cheese and Provolone Cheese. Bake 400F for 40 minutes.
