Organic and Juicy: Ciambella

My Husband loves Lemons!!! And often he buys lemon cookies or lemon cake at grocery store.


Just few months ago we decided to plant a lemon tree in our backyard and …today 6 lemons!!!! Organic and juicy!


And I decided to prepare a super slurp and scented Lemon cake for David!


The real name in Italy is Ciambella and not Cake.


Ciambella generally is round and with a hole in the middle.


Why the hole??


There are different legends about it. the most popular is: in the past the ciambella was without hole but the part in the middle remained always uncooked! So they decide to try with a hole!


For sure in Italy the Ciambella was the best cake during the holidays and celebrations in the farming tradition.


Ingredients


300 gr/ 2 1/3 cups all purpose flour


250 gr/ 2 cups sugar


4 eggs


A pinch of salt


150 gr/ 1 cup corn oil


2 tsp baking powder


½ tsp Baking soda


2 lemon juice


2 lemon zest grated




For the Icing


200gr/ 7/8 cups sugar


2 tbsp lemon juice


2 tbsp warm water



Preparation


Place the eggs with the sugar in a mixer and mix for 10 minutes (10 minutes because in this way the cake will be very soft.


Grate the 2 lemon using the zester.


In a bowl mix the oil and the lemon zest grated


After 10 minutes, add the oil with lemon zest in the eggs mixed and continue to mix


Add the lemon juice in the mixture and mix


In a bowl mix the flour with the baking powder and baking soda


Sieve the flour and add to the mixture and mix until become a homogeneous mixture.


Bake in the oven (380F) for 40 minutes.




Prepare the icing adding to the sugar (previously sieved) the lemon juice and mixing.


After that, add the first tbsp of warm water continuing mixing and the second tbsps warm water.


At the end you should obtain an icing smooth and dense.


When the cake is cooked, add the icing on top.


I decorate also with lemon slices.
