It is still October!
And here another recipe with the pumpkin!
it is a pumpkin pie, but in Italian style!

grated parmesan cheese
capocollo or bacon
extra virgin olive oil
in a frying pan place the pumpkin cut, the onion, extra virgin olive oil, white wine, salt and sage and cook for around 15 minutes. at the end mash it
in a frying pan place the mushrooms, the garlic, extra virgin olive oil, white wine, salt and cook for around 15 minutes
in a bowl mix the ricotta cheese, the mushrooms, the pumpkin, the grated parmesan cheese, the egg, the sage. Mix
In a baking pan place the pie crust and place on top the mixture.
add on top the blue cheese and the capocollo or bacon.
Bake it at 380F for 20 minutes.
