Spring Meatballs


It is a very ancient recipe (from 25 BC) and it is a dish based on beef or fish, mixed with eggs, bread, herbs and a lot of spices! As usual in Italy each family adds something to personalize the recipe. Usual I prepare it with Tomato sauce but today I cooked it with a lot of vegetables!

  • Ground beef (extra lean)

  • Grated Parmesan cheese

  • Parsley

  • Garlic

  • White Wine

  • Milk

  • Bread

  • Grated Nutmeg

  • Egg

  • Evo

  • Salt

  • Carrots

  • Celery

  • Onion

  • Herbs

  • Brandy


  • Divide the internal part of bread into two different bowls

  • In the first bowl add wine and mix to obtain a mixture soft and smooth

  • In the second bowl add milk and mix to obtain a mixture soft and smooth

  • In a large bowl add together the ingredients (ground beef, chopped parsley, chopped garlic , grated nutmeg , grated parmesan cheese, egg, salt, and the 2 bread mixtures)

  • Mix very well to obtain a smooth and soft mixture

  • Prepare your meatballs (I prefer to prepare little meatballs because it is easier to cook)

  • Place Evo in a frying pan and when it is very hot add the meatballs and cook them just for few minutes.

  • In another Frying pan, place chopped Carrot, Celery and Onion and fry slowly for 10 minutes

  • Add the meatballs, the Hers and spread on top the Brandy and cook slowly for 10 minutes
