this recipe exists because my husband asked me, during a rainy Sunday, to cook something special that reminded him of his place (Sezze).
And here is this recipe that uses Rapini, a very tasty vegetable, good in every way, on pizza, with pasta, alone as a side, with fish, and so on.
Fresh homemade Tagliatelle is the perfect pasta for Rapini!

Fresh home made Tagliatelle
Extra Virgin Olive Oil
Grated Parmesan Cheese
take the leaves of Rapini and place in a pan cooking for few minutes
In a frying pan Place Extra Virgin Olive Oil and Garlic and fry for 1 minute. Add Rapini and salt and cook for 5 minutes
add the chopped Sausage and cook for 3 minutes
in boiling and salted water cook your Tagliatelle.
add Tagliatelle in the frying pan and mix all together
serve spreading on top grated Parmesan Cheese.
