Timbale Rice

Buongiorno,

yesterday I prepared timbales Rice for an autumn dinner.

This rice is green color because we use peas, and it remember me the autumn.

It is a Sicilian traditional recipe and we call it also 4 cheeses rice because we use 4 cheeses to prepare it.

You can prepare in an unique baking pan or in single baking pan as I did this time.

Ingredients

  • Arborio Rice

  • Peas

  • Provolone Cheese

  • Mozzarella Cheese

  • Ricotta Cheese

  • Parmesan Cheese

  • Butter

  • Eggs

  • Salt

  • Extra Virgin Olive Oil

  • Onion

  • Parsley

  • Bread Crumbs


Decoration

  • Peas

  • Parmesan Cheese

  • Ricotta Cheese


Steps

  1. Cook Peas with Extra Virgin Olive Oil, Onion , Parsley and Salt

  2. Cook Rice in boiling and salted water

  3. Place Rice in a bowl and add Peas, Provolone Cheese, Mozzarella Cheese, Ricotta Cheese, Grated Parmesan Cheese, Butter and an Egg and mix all together

  4. Prepare your pudding cups, Butter them and add Breadcrumbs to cover them inside

  5. Add the Rice and bake 385F for 30 minutes

  6. For decoration, prepare a Pease sauce, blending the cooked Peas and water

  7. For decoration blend the Ricotta Cheese with Parmesan to obtain a white whipped cream that will spread on top using a Sac a poche.
