Vegetable Meatloaf


you know that the Meatloaf is with beef, but today I prepared one with vegetables.

it is more easy to prepare and it is also more healthy.

Without beef, it is so tasty and also has a mild flavor, perfect for you summer recipes.

Try it!

A tip: you can prepare it with or without Prosciutto and Mozzarella.

Here are the ingredients and the steps. You can find the video recipe in my Instagram page (my profile - highlights) or in my YouTube channel.


  • Potatoes

  • Zucchini

  • Prosciutto

  • Mozzarella

  • Breadcrumbs

  • Eggs

  • Basil

  • Extra Virgin Olive Oil

  • Salt

  • Black Pepper

  • Grated Parmesan Cheese


  1. Peel and cut Potatoes and boil in salted water

  2. Cut Zucchini and cook n a frying pan with Extra Virgin Olive Oil for 10 minutes

  3. Place the boiled Potatoes in a bowl and mash them

  4. Add Salt, Basil, Bread crumbs, Egg, Black Pepper, grated Parmesan Cheese and cooked Zucchini and mix all together

  5. Use the parchment papers and spread on top Extra Virgin Olive Oil and Bread Crumbs

  6. Place the mixture in the parchment paper and spread it

  7. Place on top Prosciutto and Mozzarella and start rolling it. to do it I suggest you to use the parchment paper that will help you

  8. Spread on top other Extra Virgin Olive Oil and Bread crumbs and close everything inside the parchment paper

  9. Place the meatloaf in a baking pan and bake 390F for 30 minutes
