I love eggplants and I try to find always a new way to cook them!
In Sicily we have a lot of ancient Eggplants recipes.
It seems originating from the hot area of India and China because the eggplants need the warm temperature and for this reason the Eggplants is very common in Sicily!
The Bittersweet Eggplants is a summer recipe, simple to prepare, tasty, fresh that you can use as side or as appetizer.
It is a vegan recipe very tasty to prepare in few steps.

Extra Virgin Olive Oil
1 teaspoon Sugar
Peel and cut the Eggplant in little pieces and place them in a bowl with water and salt. Leave theme there for 15 minutes
In a frying pan place the Garlic and Extra Virgin Olive Oil and fry for few minutes until the Garlic becomes golden
Add the Eggplant and cook for 15 minutes
Add the salt, the Capers, the Sugar and the vinegar and cook for another 5 minutes
