today I prepare this simple bread.

You prepare it in few steps but you have to leave it in the refrigerator for 20/24 hours.

You need few ingredients, and a pinch of yeast, that you can mix also just with a spoon. it is very light to digest, because of the long raise.

At the end the final result is amazing!

Here are the ingredients and the steps. You can find the video recipe in my Instagram page (my profile - highlights) or in my YouTube channel.


  • 400 gr/ 2 and 1/2 cups FLOUR

  • 300 ml water

  • 2gr / 1/4 tbsp YEAST

  • 2gr/ 1/4 tbsp SUGAR

  • 5gr/ 2/3 tbsp SALT


  1. place in a bowl the Flour, the Yeast, the Sugar and the Salt and mix all together

  2. in another bowl place the water and add, slowly, the flour mixture

  3. leave the dough in the bowl, closed with the plastic paper or a lid, for 15 minutes

  4. mix again and leave it for another 15 minutes. repeat it for 3 times

  5. place the dough in a bowl with a napkin and spread some flour. leave it closed, in the refrigerator for 20/24 hours

  6. the day after, roll out the dough and do some folders

  7. place again in a napkin inside a bowl and leave it for 90 minutes

  8. place a dutch oven in a oven 440F for 10 minutes

  9. place the dough in the dutch oven and close with a lid and bake for 30 minutes

  10. take away the lid and bake for another 20 minutes 430F
