Here there is a good recipe, vegan, healthy, but very tasty.
This is a sicilian recipe very easy to prepare in few steps.
It is important to do a tasty crispy crust and I will explain what you have to do to obtain it.

Extra Virgin Olive Oil
cut the peppers, take off the seeds and cut in little pieces
place them in a baking pan
add on top, salt, herbs, Extra Virgin Olive Oil and Breadcrumbs
bake it 380F for 30 minutes or so
