I am preparing a very Sicilian recipe with all the typical ingredient of my country like pistachio and eggplants.
It is easy and fast to prepare.

Ingredients
Eggplants
Pistachio Powdered
Prosciutto
Mozzarella Cheese
Extra Virgin Olive Oil
Salt
Steps
slice Eggplants and roast in a pan spreading on top the Salt
spread on top Extra Virgin Olive Oil
place on top of the sliced Eggplant Prosciutto and Mozzarella Cheese
cover with another slice of eggplants, like a sandwich
coat with the Pistachio
Place in a baking pan with Extra Virgin Olive Oil and bake in the oven 380F for 20 minutes
