Eggplants Bruschetta


it is summer and the days are so long!

And it is very need something fresh.

This is the summer recipe that I prefer, very simple and fast to prepare, a lot of color, Mediterranean style, fresh fresh fresh!

  • Eggplants

  • Cherry Tomatoes

  • Mozzarella Cheese

  • Basil

  • Oregano

  • Basil Leaves

  • Extra Virgin Olive Oil

  • Salt


  • slice Eggplants and place in a bowl with water and salt and leave them for 30 minutes

  • roast the slices Eggplants in a frying pan

  • meantime chop the Cherry Tomatoes and Mozzarella.

  • place Cherry Tomatoes in a bowl with Extra Virgin Olive Oil, Salt and Oregano

  • place the roasted slices Eggplants in a big tray and spread on top the Extra Virgin Olive Oil

  • add on too the chopped Cherry Tomatoes and Mozzarella

  • decorate with fresh Basil Leaves
