And it is very hot...you need something fresh.
This is the summer recipe that I prefer, very simple and fast to prepare, a lot of color, Mediterranean style, fresh fresh fresh!

Extra Virgin Olive Oil
slice Eggplants and place in a bowl with water and salt and leave them for 30 minutes
roast the slices Eggplants in a frying pan
meantime chop the Cherry Tomatoes and Mozzarella.
place Cherry Tomatoes in a bowl with Extra Virgin Olive Oil, Salt and Oregano
place the roasted slices Eggplants in a big tray and spread on top the Extra Virgin Olive Oil
add on too the chopped Cherry Tomatoes and Mozzarella
decorate with fresh Basil Leaves
