It is summer and we need fresh recipes.
Today I prepare Jumbo Shells in a different way, cold! Like a Pasta Salad.
I am sure you will love it! It is a Pasta salad, it is a stuffed Pasta, but it is different! it is an Italian delicious recipe!

Ingredients
Jumbo Shells Pasta
Cherry Tomatoes
Mozzarella Cheese
Home Made Pesto (see my recipe in my website)
Basil
Extra Virgin Olive Oil
Salt
Steps
Place in a bowl the Cherry Tomatoes cut in little pieces, Salt, Extra Virgin Olive Oil and chopped Basil
Cook pasta in boiling and salted water
When the Pasta is ready, cool down and mix with Pesto
Stuff Pasta with the Cherry Tomatoes and place in a plate, spreading on top the Mozzarella Cheese.
Decorate with Basil.
