this is my usual Pizza dough but in this case I decided for closed Pizza that seems a sombrero!
For the filling you can use what you prefer.
I Used simple Prosciutto and Cheese.
Try it and remember you can use the dough also for pizza.
Here are the ingredients and the steps. You can find the video recipe in my Instagram page (my profile - highlights) or in my YouTube channel.
500gr / 4 cups all purpose Flour
300ml warm Water
10gr / 2 tsp Salt
10gr / 2 tsp Sugar
3gr / 0.5 tbsp Yeast
15 ml Extra Virgin Olive Oil
For the Filling
Extra Virgin Olive Oil
in a bowl place the warm Water, the Yeast and the Sugar and mix all together and leave it until you see some bubbles (1 minutes usually)
add the Extra Virgin Olive Oil
in a bowl place the flour and start mixing (with the hands or with a mixer), adding slowly the Water mixture and the salt
When the dough is ready leave in the bowl, covered, for 15 minutes
after that place the dough in a countertop and roll out and start doing the folds like an envelop. Leave again the dough in a bowl covered for 15 minutes and repeat this for 3 times
at the end leave the dough in a bowl growing for 4 hours, covered
when it is ready, roll out the dough and prepare some little disks
spread Extra virgin Olive Oil on top of the disks and fill with chopped Prosciutto and Provolone cheese
Close the disks with the other disks and bake in the oven at 380F for 20 minutes
