Upside down Peach Cake

Buongiorno,

today we prepare an Upside Down Peach Cake.

It is still summer here in Florida and we still have amazing peaches.

The characteristic of this delicious dessert is that it is cooked upside down putting the decorating fruit on the bottom of the baking pan so that it is revealed when we turn upside down the pan.

Ingredients

  • 5 Peaches

  • 200gr/ 1 + 2/3 cups Flour

  • 100gr/ 0.5 cup Sugar

  • 100gr/ 0.5 cup Butter

  • 3 Eggs

  • 16gr/ 1 tbsp Baking Powder

  • Vanilla essence

  • Pinch of Salt


Caramel

  • 100gr/ 0.5 cup Sugar

  • 30gr/ 1 tbsp Butter



Steps

  1. Place the Eggs, Vanilla Essence and a pinch of Salt, in a bowl, start mixing and after add the Sugar

  2. Add the melted Butter very slowly

  3. Add Flour and Baking Powder

  4. Aside cut the Peaches in halves removing the pits

  5. Place Sugar in a frying pan and cook until it becomes liquid and brown

  6. Add Butter and mix for 1 minute continuing cooking.

  7. Add Peaches in this Caramel and cook them for 1 minute or so

  8. Sprinkle some Sugar in a buttered baking pan, and pour in it the Peaches, the Caramel, the batter

  9. Bake it at 350F for 45 minutes

  10. Turn the pan upside down when it is still warm
