Pistachio Cake


Today I am going to show you the Pistachio cake that is perfect for your breakfast and also as dessert with a spoon of Vanilla Ice cream!

Pistachio is one of the most ancient fruit that we know and Arabs brought it in Sicily.

I use a lot Pistachio in my kitchen, to prepare dessert but also to spread on top of Pasta!

Here is the recipe of a very soft Cake.

Here are the ingredients and the steps. You can find the video recipe in my Instagram page (my profile - highlights) or in my YouTube channel.


  • 4 Eggs

  • 200 gr / 1+1/4 cups flour

  • 50 gr / 1/3 cups Pistachio Flour (you can prepare it blending row pistachios)

  • 200gr / 3/4 cups + 2 tbsp Ricotta Cheese

  • 130 gr / 2/3 cups Sugar

  • 16gr / 2 tbsp Baking Powdered

  • Powdered sugar and Pistachios to decorate


  • place in a pan the Eggs, the Sugar and start mixing for 1 minute to obtain a soft cream

  • add the Ricotta Cheese and Pistachio Flour continuing mixing for 1 minutes

  • add Flour and Baking Powdered continuing mixing

  • place the dough in a cake pan already buttered and floured

  • bake it for 40 minutes at 350F

  • when it is ready decorate with Powdered Sugar and Pistachios
