Summer Salmon Cake
today I prepared a nice salted Salmon Cake.
the base is made with potatoes mixture.
you can decorate on top how you prefer.
It is fresh, using salad, salmon, cherry tomatoes and an amazing Burrata.
you can serve it for your summer dinner...delicious and beautiful to see.

Grated Parmesan Cheese
Extra Virgin Olive Oil
peel and cut the Potatoes and cook in a pan with boiling and salted water for 20 minutes
place the cooked Potatoes in a bowl and add Eggs, Grated Parmesan Cheese, Salt, chopped Parsley and Bread Crumbs to obtain a consistent mixture
place the Potatoes mixture in an oiled cake pan to prepare the base of your cake, add on top Extra Virgin Olive Oil and bake for 20 minutes, 400F
when the Base of the cake is cold down you can decorate with Green Salad, Cherry Tomatoes, Tuna, Smoked Salmon, Black Olives, Burrata and spreading on top, Salt and Extra Virgin Olive Oil
Place in the refrigerator for 1 hour
